Roast beef with Brazilan Pesto sauce – Recipe

Roast beef with Brazilan Pesto sauce (Rosbife com molho pesto brasileiro)
This is a delicious Brazilian recipe that is ideal for the whole family. It can be served with vegetables, rice or pasta (the choice is yours).

Serves 4 -6

INGREDIENTS

For The Pesto Sauce
– 2 kiwis peeled and chopped
– Juice of 1 lemon
– 1 handful of chives, chopped
– 1/2 handful of parsley, chopped
– 1/2 handful of rocket leaves, chopped
– 1/2 clove of garlic without the core
– 500ml olive oil

For the Roast beef
– A piece of Beef (topside or silverside) (2kg)
– 1 cup of dry red wine
– 1/2 handful of rosemary, chopped
– 1/2 handful of thyme, chopped
– 1/2 handful of parsley, chopped
– 1 yellow pepper, chopped
– 2 tomatoes, chopped
– 2 cloves of garlic, minced

METHOD OF PREPARATION

Roast Beef
Marinate the beef in a bowl with the red wine, rosemary, thyme, parsley, peppers, tomatoes and garlic, mix well and leave to marinate for about 24 hours in the refrigerator.

On a cooking tray place the meat with the marinade, cover the tray well in aluminum foil and cook in a light heated oven on a preheated 180 ° C for about 2 hours.

Pesto Sauce
In a blender place the kiwis, lemon juice, chives, parsley, rocket leaves, garlic, olive oil and mix well. Serve immediately

If you wish to use a different meat then make the following adjustments.

Chicken: Substitute parsley for 6 leaves of sage
Pork/Lamb: Replace the parsley with 1/2 handful of mint
Fish: Replace the parsley with 1/2 handful of coriander
